Salisbury Rarebit

Ingredients
For the sauce
- 15g unsalted butter
- 15g plain flour
- 100ml Guinness
- 80g Farmhouse Red Leicester, grated
- a little English mustard
- dash of Worcestershire sauce
- dash of Tabasco
- salt and freshly ground black pepper
To complete
- a white onion, sliced and softened
- 2 slices white bread
Method
- Melt the butter in a pan, add the flour and cook for 6-8 minutes, stirring.
- Gradually whisk in the Guinness and bring the sauce to the boil.
- Simmer for another minute then remove from the heat. Add the remaining ingredients and stir until all the cheese has melted.
- Toast the bread on both sides and arrange the softened onions on top. Spread the rarebit mixture on top and glaze under the grill.
Chef’s Tip: If you don’t have any Guinness or prefer a less intense flavour, try using stout or bitter. And if you are teetotal, you can substitute milk for the Guinness.
