Blacksticks Blue and Westmorland Ham Potato Cake
Ingredients
- 1 packet Westmorland ham
- 100g Blacksticks Blue
- 4 Pink Fir potatoes (cooked)
- 1 bunch spring onions
- 2 shallots, finely diced
- 1 teaspoon chopped sage
Method
- Line a small cake tin with the Westmorland ham
- Slice the cooked Pink Fir potatoes and place into a bowl
- Add a teaspoon of olive oil, the sliced spring onions, chopped sage and the diced shallots
- Place a layer of the potato mix into the cake tin and then some of the Blacksticks Blue, repeat the process until the tin is full
- Pull the excess ham over the top of the tin and bake in the oven at 170°C until golden brown (approx 10-15m)
- Remove from the oven and serve with some salad and balsamic vinegar, or as a garnish to accompany a main course.
