Double Gloucester, Onion and Pancetta Bake
Ideal as a snack with fresh, crusty bread, or as an accompaniment to chicken or roasted meats

Ingredients
- 2 tbsp olive oil
- 450g / 1 lb red onions, peeled and quartered
- 8 shallots, peeled
- 8 button onions, peeled
- 2 tbsp balsamic vinegar
- 1 tsp brown sugar
- 1 tbsp chopped thyme
- salt and freshly ground black pepper
- 3 plum tomatoes, sliced
- 6 basil leaves, torn into shreds
- 70g pancetta, cut into strips
- 125g / 6 oz Butlers Farmhouse Double Gloucester Cheese, grated
Method
- Pre heat the oven to 190°C / 375F / Gas 5
- Heat the oil in a large frying pan. Add the onions and shallots then cook for 12 -15 minutes until they start to soften
- Blend together the vinegar, sugar, thyme and seasoning and pour over the onions mixing well, then transfer to an oven proof dish
- Arrange the sliced tomatoes and pancetta on top
- Sprinkle over the basil and Farmhouse Double Gloucester cheese
- Bake in the oven for 25 - 30 minutes until golden and bubbling
