Double Gloucester, Onion and Pancetta Bake

Ideal as a snack with fresh, crusty bread, or as an accompaniment to chicken or roasted meats

Method

  1. Pre heat the oven to 190°C / 375F / Gas 5
  2. Heat the oil in a large frying pan. Add the onions and shallots then cook for 12 -15 minutes until they start to soften
  3. Blend together the vinegar, sugar, thyme and seasoning and pour over the onions mixing well, then transfer to an oven proof dish
  4. Arrange the sliced tomatoes and pancetta on top
  5. Sprinkle over the basil and Farmhouse Double Gloucester cheese
  6. Bake in the oven for 25 - 30 minutes until golden and bubbling
