Kidderton Ash with Red Onion Marmalade

Serves 4

Fresh tasting goat’s cheese surrounded by fine ash then spread onto warmed bread with a succulent hand made marmalade. This is just a quality snack or supper dish.

Method

  1. To make the marmalade warm the oil through gently on the stove, add the onions and cook gently until they soften.
  2. Add the wine and the port and reduce the liquid by half.
  3. Add the redcurrant jelly and reduce the liquid until the onions have a glossy coating.
  4. Whilst the marmalade is cooling, slice the cheese into four portions (slicing it on a 45 degree angle gives it an interesting presentation)
  5. Set the cheese upright on a small plate with some of the marmalade. Add salad, celery sticks and warm bread or crackers.
