Crunchy Salad with Shaved Lancashire Cheese
Serves 4
Crispy Cos lettuce, dry cured ham finished with croutons and shavings of Butlers Tasty Lancashire. This is a refreshing salad with soft rich ham and crisp salad finished the tasty zing of a carefully matured Lancashire cheese.
Ingredients
- 2 heads of washed Cos lettuce
- 8 slices of dry cured or smoked ham cut into strips
- 8 radishes – thinly sliced
- 4 slices of crusty farmhouse bread made into croutons
with 2 tbsp olive oil
- 20 baby plum / cherry tomatoes
- 1 apple – thinly sliced
- 250g wedge of chilled Butlers Tasty Lancashire cheese
- a bunch of fresh chives
For the dressing
Snip some of the chives into 100ml of mayonnaise and thin
it out with a little water or single cream.
Method
- Make sure the leaves are well drained, then cut them into strips.
- Add the ham, halved tomatoes, sliced apple and radishes then snip in a few chives.
- Place the salad in a salad bowl, toss gently then drizzle over some dressing.
- Sprinkle on the croutons and then, using a potato peeler shave on the Tasty Lancashire cheese. Start at the point of the wedge and peel directly onto the salad.
- Finish with pieces of chives and a few more halves of cherry tomato
